Right Now

I'm baking a Diet Coke Cake.

Basically, a cake mix and a diet soda mixed together and baked according to the box directions. Nope, you don't use oil or eggs.

I've heard raves about it, and it's only 2 WW per slice (or something crazy like that) and tomorrow we are celebrating the birthday of a co-worker who is very health-conscious, so this will be just her style. (I hope!)

I chose a yellow cake mix and a Diet Cherry 7up.... Hope it turns out OK! I'll let you know.

I Hope it turns out much better than the one and only time I tried it... with a diet coke and a brownie mix. (I was addicted to brownies - my only choc dairy-free choice - and I was trying to cut back on calories.) I'm not sure WHAT I did wrong... but it was super salty and not edible! ;)

You can also do a spice cake (or any for that matter, spice just taste really good) and a 20 oz can of crushed pineapple! It is really good too, nothing else, just those two things!! YUM. Still two points per muffin I believe. I made muffins, it was just easier as it is a little sticky.
Also, strawberry cake with diet sprite is yummy!!

I bet it will be really good. My grandfather makes 7-Up cakes all the time...they are so good!

Aren't they the moistest cakes ever!

E - for whatever reason, it does weird things to brownies... I'd stick to a cake mix!

I do this all the time and its SOOOO good! I like that it makes them so moist and it's diet friendly for those that need it but it still tastes good for those that don't!

WOW Ive never heard of this! I will definitly try this out for Tursday family night.I usually make a desert and my In laws are diabetic so maybe this could please the picky kids and the in laws!Great blog BTW :>
